Breakfast Banana Split 

It can be hard to find an easy and yummy vegan breakfast. When you do find a good one, they can also be complicated to assemble and require ingredients you don’t always have on hand. 

This breakfast banana split is different. You probably already have all the ingredients you need in your kitchen. 

This is a versatile and quick sweet vegan breakfast idea. 


1 banana 

1/3 cup So Delicious Cultured Coconut Milk in vanilla (a dairy free yogurt alternative)

A couple Tbsp’s. of your favorite vegan chocolate spread

1 small handful of walnuts

1 small handful of granola 

(Other ingredients to choose from: cherries, fresh fruit, mint leaves, seeds, other dairy free chocolate baking morsels, melted peanut butter, protein powder, etc) 


1. Slice banana lengthwise (be careful not to cut all the way through!)

2. Melt chocolate spread in microwave for about 30 seconds. 

3. Scoop on Cultured Coconut Milk. 

4. Stir then drizzle on chocolate spread. 

5. Sprinkle on granola. 

6. Toss on a few almonds.  

7. Add any other ingredients you might like and enjoy! 


This Breakfast Banana Split can be eaten as a dessert as well!

Peanut Butter & Banana Green Smoothies

These green smoothies are a great way to get some of your RDA’s (Recommended Daily Allowances) of fruits, vegetables, and (non) dairy.

Here is the starting point on how to build a green smoothie:

I wouldn’t even add a sweetener. The smoothie tastes great as is.

For the smoothie I made in the pictures shown I used:

1 1/2 cups Vanilla Almond Milk

1 big handful of spinach

2 fresh bananas

1 cup fresh strawberries

2 tbsp. of Peanut Butter Powder

It tasted just like a peanut butter and banana’s! You could not even tell there was spinach!

Eating right never tasted so good!

A Little Something Different – Avocado on Toast

I’ve been wanting to try something besides dry wheat toast, or the common jelly on toast. We don’t even buy jelly that often here, and even though we did recently, I still wanted to try avocado on my toast.

It really reminded me of a sandwich my mom used to make for me. Avocado, facon bits (fake bacon bits) and veganeise.

The avocado provided a healthy way to top my toast, while also being more filling.  Continue reading

Blueberry Banana Pancakes with Wildflower Honey

Who doesn’t love pancakes? The problem with pancakes is that we as Americans eat them entirely too often. We load them with butter and fake maple syrup, eat them with bacon, sausage, and a couple eggs. Classic, right?

These pancakes could easily take over in the classic breakfast department. While the cake itself is not the healthiest (I really haven’t made whole wheat cakes that often…hello future post!!), the fresh blueberries and banana make it a great alternative to a box mix and cheap syrup. We used Organic Wildflower Honey (available at Aldi’s) on these cakes and they are so delicious!

An (Almost) Vegan Egg Muffin Breakfast Sandwich

Try this quick, easy and yummy breakfast idea! I made an almost vegan Egg Muffin Breakfast Sandwich with 100% WW English muffin, egg white with Go Veggie! Mozzarella shreds, and two slices of Light life “beef” sausage!! Add avocado, salsa, or hot sauce to mix it up!! Accompany your Egg Muffin with fresh fruit or a smoothie! Eating right never tasted so good!!
